Got to check another thing off the bucket list this week…making a Youtube video!
^ This one to be exact! Not to say I haven’t made videos before–just none in my adult life/post learning how to actually edit (a.k.a. becoming a graphic designer). “What I Eat in a Day” videos intrigue me to say the least. I find it fascinating to see what other people eat and how they prepare it. Part of this is due to me still being very new when it comes to cooking and eating right, and the other part is my obsession with the good old Tube of You. Food + Youtube = hours of my life wasted in front of my laptop. How’s that for math!
Part of my wanting to make this video was to share what I legitimately eat during the day–at least the days I work from home. It is a great source for myself to look back on as I grow and I hope a great source for you as well! Ideally, this video will be the first of its series, seeing as what I do and eat are constantly evolving during this journey. “What I Eat in a Day When I’m Lazy,” “What I Eat in a Day at Work,” “What I Eat…”

Breakfast: Asparagus, Onion, Zucchini & Pecorino Romano Omelette (2 SP)
- 4 pieces of asparagus, chopped into fourths
- 1/4 cup zucchini, cut small
- 1/8 cup white onion, chopped
- 2 tbsp pecorino romano cheese (2 SP)
- 2 eggs
Lunch: Tropical Smoothie (5 SP, serves 2)
- 4 oz (roughly 1/2 cup) non-fat vanilla yogurt
- 1 1/2 cup Dole Frozen, mixed fruit (sliced strawberries, pineapple chunks, mango chunks, and sliced peaches)
- Little bit of water to get desired thickness
Dinner: Chicken Bowl from Chipotle (6 SP, 3 SP for Guac from home)
- 1/2 serving of brown rice
- 1 serving chicken
- 1 serving black beans
- Mild salsa/pico de gallo
- Optional: Wholly Guacamole 100 cal packs (3 SP)
Dessert: Enlightened Movie Night Ice-cream (3 SP per serving)
