So now that we’ve established that eggs, especially when consumed in the morning, are the real MVP, let’s get down to more important matters–how to spruce them up! Plain eggs are great accompaniments to many breakfast dishes, but I’m talking about main dish worthy eggs! I’m talking omelettes! Where the possibilities are endless and creativity is everything. Lyss’ GO-TO Spinach, Mozzarella & Ham Omelette
Serves: 1 | SmartPoints: 2
This is the holy trinity of omelettes! An omelette staple, if I may. This time around, instead of using feta or a higher point cheese, try pulling apart a Weight Watchers cheese stick or adding a slice of some low fat swiss cheese! Both are only 1 SP, which is less than half of the other cheeses out there 🙂
INGREDIENTS
- 2 eggs ( 0 SP)
- 1 cup fresh or frozen spinach (0 SP)
- 1 Weight Watchers Low Moisture Part Skim Mozzarella String Cheese pulled apart (1 SP)
- 2 slices of Canadian bacon, diced (1 SP)
- Garlic, salt & pepper to season (0 SP)
INSTRUCTIONS
- Whisk eggs in small bowl.
- Spray a medium-sized pan with a 0 SP cooking spray, and drop in spinach and ham. Cook on a medium heat until spinach has wilted. If burning starts to occur, add a tiny bit of water to the pan.
- Pour the whisked eggs into the pan and spread to cover its entire bottom. Begin dropping in the pulled apart pieces of string cheese, in addition to seasonings.
- Once the 90% cooked, flip the omelette over into halves or thirds, let cook for another 30 seconds to a minute.
Loaded Primavera Omelette
Serves: 1 | SmartPoints: 2
This omelette is MEGA and the perfect way to enjoy all of Spring’s fresh veggies in the morning. Since this omelette is jam-packed, I recommend using 3 eggs to hold it all together, or 2 eggs with all other ingredients finely chopped. Don’t worry if it breaks! It tastes just as amazing.
INGREDIENTS
- 3 eggs (0 SP)
- 3 asparagus stalks, chopped (0 SP)
- 1/4 cup zucchini, chopped (0 SP)
- 1 tsp white onion, chopped (0 SP)
- 3 cherry tomatoes, halved (0 SP)
- 2 tbsp pecorino romano cheese (2 SP)
- Garlic, salt & pepper to season (0 SP)
INSTRUCTIONS
- Whisk eggs in small bowl.
- Spray a medium-sized pan with a 0 SP cooking spray, and drop in asparagus, zucchini, onions, and tomatoes. Add a small amount of water to the pan to prevent burning, and cook on a medium heat.
- Once the veggies are cooked, pour the whisked eggs into the pan and spread to cover its entire bottom. Sprinkle the pecorino romano on top, along with other seasonings.
- When the omelette is about 90% cooked, flip it over into halves or thirds, and let cook for another 30 seconds to a minute.
Poppin’ Cauliflower Omelette
Serves: 1 | SmartPoints: 2
Sometimes we all just need a little kick in the morning. The great part about this omelette is that the heat level is adjustable, and the cheese balances out any poppin’ power you add!
INGREDIENTS
- 3 eggs (0 SP)
- 3/4 cup cauliflower (0 SP)
- 2 tbsp pecorino romano cheese (2 SP)
- Black pepper, garlic, paprika
INSTRUCTIONS
- Whisk eggs in small bowl.
- Spray a medium-sized pan with a 0 SP cooking spray, and drop in the cauliflower. Make sure the cauliflower is cut up into tiny pieces. Add a small amount of water to the pan to prevent burning, and cook on a medium heat.
- Once the cauliflower is cooked, pour the whisked eggs into the pan and spread to cover its entire bottom. Sprinkle the pecorino romano on top, along with the paprika and black pepper seasonings.
- Once the 90% cooked, flip the omelette over into halves or thirds, let cook for another 30 seconds to a minute.
